The Shades of Potatoes

As the climax in seasons approach, our taste buds are excited to welcome holiday flavors.


Each season, our creative taste buds at Stella Bistro Foods gather to choose the "hot food pick" for the season. Our "hot food pick" is cost effective, has limitless recipe possibilities and can appease any size crowd.


What other way to stretch your dollar, feed the family and create quick and easy snacks than with potatoes!


Potatoes have a history of making dull food dishes exciting as well as making their mark in food history beginning in the 18th century. As potatoes became a staple in North American cuisine, the "meal stretcher", introduced us to many shades of potatoes.



Avoid using potatoes containing shades of green. Solanine, a toxin, can cause cramping, headaches, diarrhea or fever.

Potatoes have three categories.


Whether you're a lover of garlic mash potatoes or Shepard's Pie, the super food can be assorted into three categories: starchy, waxy and all-purpose.


Starchy potatoes are ideal for baking and frying. These tasty potatoes are fluffy and absorbent. Waxy potatoes are smoother in texture and holds well during cooking process. This potato are ideal for soups, stews, and potato salad. All-purpose potatoes contain less starch.


Potatoes are gluten free. The root vegetable contain phytochemicals and immune boosting vitamins and minerals. Bright skinned potatoes have the most antioxidants.

As we create side dishes in our test kitchen, we've learned each potato has a tasty role and numerous health factors.

Russet - "Classic Potato"

Who doesn't love the classic russet potato? Russet potatoes have been gracing our dinner tables for years as traditional comfort meals. As russet potatoes are ideal for baking and frying,the starchy potato is very versatile!

Jewel Yam - "The Sweet Potato"


Jewel yams, also known as sweet potato, are ideal for baking and roasting. As a low glycemic index veggie, sweet potatoes provide fiber, which lowers cholesterol in blood and prevent colorectal cancer.

Sweet potatoes have more vitamin A than Yukon Gold potatoes. The sweet potato family has more carotenoids than russet potatoes.

According to the American Diabetes Association considers sweet potato a super food. Sweet potatoes have zero grams of fat. The "sweet potato family" is high in vitamins A and C. Vitamin A helps your regular and night vision. Vitamin A helps brighten your skin and teeth. Vitamin C found in sweet potatoes contributes to your daily iron and calcium intake.


Japanese sweet potatoes are within the sweet potato family. Japanese sweet potatoes have pink or purple skin with pale flesh. This delicious sweet potato has a sweet and nutty flavor, ideal for grilling, steaming or baking.


Hannah sweet potatoes are also related to the Jewel Yam. Unlike Jewel Yams, Hannah sweet potatoes are starchy with lighter skin and flesh.

Russian Banana Potato

Enjoy the waxy potato in limitless ways - grilled, sauteed, fried, roasted or steamed for potato salad! You can discover the tasty root vegetable by its distinguished pale yellow skin and firm texture.


This elegant potato is an excellent source of potassium and vitamin C.

Red Gold Potato

Red gold potatoes are all-purpose with red skin and golden flesh. This delicious tasting potato has a smooth, flavorful, sweet and nutty taste. The golf ball sized potatoes are available at your local grocery store.


Red gold potatoes have more anthocyanins than sweet or russet potatoes. Anthocyanins and carontoids help prevent certain eye diseases.

As our test kitchen favorite, use red gold potatoes for baking, boiling, roasting and gently mashing.


Purple Majesty

Don't let the color fool you - purple majesty potatoes are great for roasting, baking, soups and potato salad! This all-purpose potato is oblong shaped with purple moist skin and matching firm flesh.


As the purple color is vivid while cooking, they're high in antioxidants. The eye popping potato is rich in flavonoids, carotenoids and phenolic acids. The antioxidants found in purple majesty potatoes neutralize free radicals that can cause cell damage. Free radicals can cause of diseases like heart disease, diabetes and related cells.


According to Healthline, studies show purple majesty potatoes have three to four times more antioxidants than Yukon Gold potatoes.


Choose a Purple Majesty potato as an alternative potato for one's diagnosed celiac disease or non-celiac gluten sensitivity.


Both Yukon Gold and red skinned potatoes contain more potassium, magnesium and iron than sweet potatoes.


Yukon Gold Potato

Yukon gold potatoes are popular in many kitchens. Yukon gold potatoes are golden inside with rough textured brown skin.


Yukon gold potatoes are rich in vitamin C which aids in the healing process. Enjoying this all-purpose potato can help lower blood pressure. It's a great source of potassium. Potassium aids in bodily functions like muscles, nervous system and heart health.


The popular all-purpose potato is great for mashing, salads, grilling - practically any potato dish your dinner table desires.
